You might be surprised to find out that fudge was actually invented right here in the Hudson Valley.

Of course, we all know that the cough drop was invented here back in 1847. But 50 years after the Smith Brothers gained fame and fortune for their candy "mistake," another legendary food item was born in Poughkeepsie.

Emelyn Battersby Hartridge was a student at Vassar College back in 1892 when she was credited with creating fudge. According to the college, a letter written by the student contains the very first documented fudge recipe.

The treat was so popular among students that they would make it in the middle of the night using gas from their lamps as makeshift burners. The dangerous practice was a testament to the deliciousness of what proud students called "Vassar Fudge."

The college even posted the original recipe on their website for those who want to give it a try. Four simple ingredients are used in the creation of the original fudge. Cream, butter, unsweetened chocolate and sugar combine to make this legendary treat.
