When you look for a pumpkin to carve a Jack O'lantern, you are usually looking for a large specimen that has plenty of room for your creative carving. Thus, most people look for something with some size, approximately 10 to 12 inches or larger, depending on what over all look you are going for.

Yes, you will need to clean your sugar pumpkin, which involves removing the stem, cutting the pumpkin in half, cleaning out the seeds, taking off the skin and then roasting the gourd so you can then use the pumpkin 'meat' in your pies.
