Just in time for warmer weather, one of Dutchess County's favorite spots to grab wings, BBQ, and seafood has announced their venture into the food truck business.
It seems like there's never been a better time to add some wheels to a restaurant. With the rise in popularity of venues like the East Fishkill Food Truck Park that offer Hudson Valley residents a wide array of dining options, and the relatively-low startup costs of a food truck when compared to a brick-and-mortar location, this decision seems like a no-brainer.

This dessert-centric concept offered residents everything from Fruity Pebbles to ice cream sundaes on top of everybody's favorite breakfast item. Poughkeepsie's PC's Paddock Announces New Food Truck
Last week, PC's Paddock, a locally-owned Poughkeepsie, NY restaurant took to Facebook with some exciting news: "Surprise!!!", they said, "we’re opening up our own food truck!" Their new truck, which owners say will be focused on their signature wings as well as "creative menu items for catering and private events", is expected to be operational by this summer.
