Since March I've been highlighting local restaurants that have been able to protect customers and employees without sacrificing quality and service. Mexicali Blue in Wappingers Falls has risen to the top time and time again.

Before the pandemic, Mexicali Blue was known for their attention to detail and passion for fresh ingredients and made-to-order food. Knowing how much pride Mexicali Blue has always put into their food, it's not a surprise that they have also been meticulous about following all CDC guidelines and doing thorough cleanings multiple times a night. And even with all of the extra work that's gone into making the dining experience safe and enjoyable, Mexicali Blue has even found the time to introduce some incredibly delicious specials.

Right now they're got a Bang Bang Shrimp Burrito. It's a coconut-sriracha infused shrimp with guacamole, cabbage, cilantro, rice and beans topped with coconut sriracha aioli. They also have done the "impossible" by making a vegan version of their incredible pulled pork burrito. Mexicali Blue takes jack fruit that's been marinated in achiote spice and combines it with sautéed onions and garlic, pico de gallo, guacamole, marmalade onions, cilantro, sweet chili sauce, vegetable rice, and black beans to create a mouth-watering burrito that even meat lovers will enjoy.

Of course, they also have their Food Network winning Short-Rib Burrito, an insane selection of hand made tacos and the biggest margarita you've ever seen.
