The Hudson Valley is ready to say goodbye to 2020, but unsure how to celebrate this year.

With bars and restaurants at low capacity and New Year's Eve parties canceled, the one year when we really need to celebrate the end of the year is one where we're left with very few options. Luckily, one of the Hudson Valley's best restaurants has everything you need to ring in the New Year in delicious fashion.

For me, nothing says party more than Mexican food. And no one does it better than Mexicali Blue in Wappingers Falls. With a menu of fresh, made-to-order favorites, it's easy to plan the best New Year's Eve ever, even if you're not going out on the town.

Our family is planning on ordering up some of Mexicali Blue's famous guacamole and chips, burritos, street tacos and a few of the restaurant's unmissable specials.

Right now they're got a Bang Bang Shrimp Burrito. It's a coconut-sriracha infused shrimp with guacamole, cabbage, cilantro, rice and beans topped with coconut sriracha aioli. They also have done the "impossible" by making a vegan version of their incredible pulled pork burrito. Mexicali Blue takes jack fruit that's been marinated in achiote spice and combines it with sautéed onions and garlic, pico de gallo, guacamole, marmalade onions, cilantro, sweet chili sauce, vegetable rice, and black beans to create a mouth-watering burrito that even meat lovers will enjoy.

Of course, they also have their Food Network-winning Short-Rib Burrito, an insane selection of hand made tacos and what celebration would be complete without the biggest margarita you've ever seen?
