Ready to celebrate Mardi Gras? Here's a quick education on everything you need to know about authentic Creole food.

The Boris & Robyn Show celebrated Fat Tuesday in style this morning. Of course, everyone was decked out in masks and beads, but more importantly we learned all about the traditional food served in New Orleans.

Chris and Kendell from The Crooked Rooster on Route 55 in Poughkeepsie were kind enough to school us on everything from crawfish to king cake and the difference between gumbo and jambalaya.

If you've never had Creole food before, it might seem a bit intimidating. Ingredients like okra and crawfish aren't commonly found in the Hudson Valley and may seem a little scary, but when incorporated into these authentic dishes you'll quickly understand why Mardi Gras partygoers are so enthusiastic about the yearly celebration.
