If you're not sure what type of chocolate your Valentine will want, Chef Kristin Egan from the Culinary Institute of America is here to help.

Everyone loves chocolate, but not a lot of people can tell the difference between good chocolate and amazing chocolate. Chef Egan visited our studios armed with some big boxes from the CIA kitchen to show us exactly what goes into making quality chocolate.

Of course, you have to know the difference between milk chocolate, dark chocolate and other varieties before you can really understand what qualities make them the best. Egan tells us that it really does come down to the ingredients. Higher quality chocolate will always have better raw ingredients, but that doesn't mean that all mass-produced chocolates can't also be delicious.

In this chocolate "crash course" Chef Egan explains how to pick out some great chocolate and what types of Valentine treats to avoid. Also, we really wanted to know if white chocolate actually classifies as "chocolate." You may be surprised by the culinary expert's answer.
