If you've visited Beacon over the past eight years, then you've probably heard of Poppy's Burgers and Fries on Main Street. 

Chef/Owner and CIA graduate Paul Yeaple took pride in only using fresh, local ingredients for his burgers. Poppy's had a small and easy to decipher menu that drew scores of people to it's Main Street location for burgers, fries, and beer.

That was until March when Poppy's unfortunately closed in Beacon. But now, the Poughkeepsie Journal says Yeaple wants to potentially expand. Could a small chain of Poppy's be coming to the Hudson Valley?

He recently told the Journal

Poppy's could evolve into a chain with simple, delicious food, but I would need partners to expand beyond a single store.

Yeaple says he'd been looking at locations in Dutchess, Orange, and Ulster Counties for potential spots. With so many Hudson Valley businesses closing shop or leaving for good, you have to hope his dream of franchising will come to fruition.

Yeaple certainly has the culinary skills. You may have even seen him beat the competition on an episode of Chopped on the food Network back in 2010.

Now, he's just looking for some potential business partners to make it happen.
