Our beer of the week is made with local tree sap instead of water. The result is a unique, sweet tasting beer that is surprisingly refreshing.

Newburgh Brewing Company has partnered with Madava Farm in Dutchess County before. In 2013 their Crown Maple syrup was used to make an Irish Red ale and last year it was Xylem Farmhouse Ale.

This year, Newburgh Brewing Company has crafted a Pilsner using over 600 gallons of maple sap taken directly from Madava Farm. Maple sap is the clear liquid that comes out of the tree before it's boiled down into syrup. Because it's much sweeter than water and a little thicker, it lends some earthy notes to the finish. Although the beer is unfiltered, it still has a light straw color and a crisp, clean taste.
